My friends are thrilled to move in with me next semester, and this recipe is topping the list of reasons why. It awakens the naughty kid in us, as we all shamelessly swipe fallen topping from the pan to eat in body-melting, chickenless bites.
This recipe from Hellman’s is just divine on night one, and it’s pretty good leftover, too. Serve with rice or rice pilaf (coming soon!), roasted zucchini or a nice salad, and I promise you’ll fall in love.
Parmesan Crusted Chicken
Prep Time: 10 minutes
Cook Time: 20 minutes
4 boneless, skinless chicken breasts
½ cup mayonnaise
¼ cup grated parmesan cheese
4 teaspoons bread crumbs
Preheat oven to 425 F.
Combine mayo with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayo mixture, then sprinkle with breadcrumbs.
Bake 20 minutes or until chicken is thoroughly cooked and the crust is slightly browned.
