Hey! I’ve been getting pretty experimental lately, which occasionally leads to recipes that everyone loathes (looking at you, salmon cakes). I’ve also got a few recipes that need a little tweaking before I’m ready to share.
This simple side is inspired by the big bag of Japanese cucumbers we received from our neighbor’s garden. Fried zucchini has always been fantastic, and fried cucumbers are a close runner up.
Total Time: 40 minutes
2 medium cucumbers
1 cup bread crumbs
Thinly slice the cucumbers and set aside.
Pour a thin layer of oil in a large pan over medium heat. While the oil heats, whisk the egg in a small bowl and pour a portion of breadcrumbs into a second bowl.
Dip the cucumber slices in the egg, then coat with breadcrumbs. Fry in the oil until browned, flip, and then move to a paper-towel lined plate. Continue to cook the breaded cucumber slices, refreshing the oil as necessary.
